This is a recipe that is half made up. I found it a few years ago online before Austin was born and cannot find it now but below is what I do remember mixed in with some other ingredients. Scooter, Austin and I like it. Total comfort food.
Socialized Chicken Surprise
1 skinless, boneless, free-range, socialized chicken breast
1 1/2 cups of shredded sharp cheddar
1/2 cup of sour cream
1 package of frozen carrots and peas (I use a 12 ounce bag)
1/2 cup of frozen spinach
4 table spoons of mild or hot salsa (that's just how I measure it out)
1/2 teaspoon of salt
1 ready made pie crust

Socialized Chicken Surprise
1 skinless, boneless, free-range, socialized chicken breast
1 1/2 cups of shredded sharp cheddar
1/2 cup of sour cream
1 package of frozen carrots and peas (I use a 12 ounce bag)
1/2 cup of frozen spinach
4 table spoons of mild or hot salsa (that's just how I measure it out)
1/2 teaspoon of salt
1 ready made pie crust
Preheat oven to 375 degrees. Take out ready made pie crust from fridge to get close to room temperature.
- Cook chicken breast fully and cut up into small pieces.
- Throw chicken into bowl and mix in the package of vegetables, spinach, 1 cup of the cheese, sour cream, salsa, salt. Mix all together while saying "Olé!"
- Put mixture into a pie pan or 8x8 glass/metal pan. Spread evenly.
- Use last 1/2 cup of cheese to spread on top.
- Place pie crust on top and pinch edges.
- Put into oven for 20-25 minutes or until crust is browned and mixture is bubbling.
- Take out of oven and let cool for about 10 minutes before serving.
- Eat.

Love that I get a shout out on your blog for keeping you on track.:) That is the story of my life---I live with Sadie and three guys. (They always need keeping on track.) Wish I could get paid to keep people on track....can't wait to try this recipe, not sure about the socialized chickens though, maybe we don't have them in MI. Hee hee.
